Make this Pronger Protein Power Egg White Bites recipe at the start of your week and you’ll have a healthy breakfast prepped that’s ready to head out the door with you.
Ingredients:
Cooking spray
1 (16 oz.) carton liquid organic egg whites
¼ teaspoon of kosher salt
dash of fresh ground pepper
¼ teaspoon garlic powder
2 cups of organic fresh baby spinach
1 tablespoon of finely chopped basil
½ cup organic crumbled feta cheese
½ cup diced organic cherry tomatoes
Directions:
Preheat the oven to 350 degrees. Spray 12 cup muffin or bar pan with cooking spray (my 12 cup bar pan is also non-stick).
Chopped the basil, spinach, and cut cherry tomatoes in half or quartered (depending on how big they are).
Pour liquid egg whites into a medium size mixing bowl. Whisk in the garlic powder, salt, and pepper.
Add in the spinach, cherry tomatoes, and basil. Mix.
Ladle the egg mixture into the pan evenly, filling each cup about ¾ full. Top each egg cup with approximately 1 tablespoon of crumbled feta.
Bake in the oven until the Pronger Protein Power Egg White Bites are set and not runny, around 20 minutes.
*These healthy and delicious bites will be good in your refrigerator up to 5-7 days. It is such an easy on the go filling breakfast. I even pack these in my bento boxes for morning flights. Everyone in the family will grab 2-3 bites pop them in the microwave for about 30 seconds and off they go!
